Kofta Hotdogs

Ingredients

500g mince (for kofta)

2 tsp extra virgin olive oil

75g capsicum dip

100g hummus

4 Woolworths crusty jumbo long rolls, halved

3/4 cup Woolworths Smokey Chipotle Cheddar & Tasty Cheese Shredded Blend

1/4 bunch continental parsley, leaves picked, chopped

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Line a tray with baking paper. Roll mince into 16 balls. Heat oil in a large frying pan over medium-high heat and cook balls for 10 minutes or until cooked.

Step 2 of 3

Combine capsicum dip and hummus in a small bowl. Spread ¼ of the mixture inside the rolls. Top with 4 meatballs. Sprinkle with cheese.

Step 3 of 3

Bake rolls for 5 minutes or until cheese has melted. Sprinkle with parsley and serve warm.

These easy, flavour-packed kofta hotdogs make a tasty midweek meal. The recipe uses leftover mince to help stretch the grocery budget.
